Hoạt động nhập và chế biến gà đông lạnh được thực hiện tại công ty con của Vinam là Công ty TNHH Vinam Vũng Áng. Nguồn gốc chủ yếu của thịt gà cấp đông nhập khẩu chủ yếu đến từ Nhật Bản. Số lượng thịt được nhập khẩu vào Việt Nam rất lớn và Công ty đã nhận được kết quả kiểm nghiệm vệ sinh an toàn thực phẩm do Viện kiểm nghiệm an toàn vệ sinh thực phẩm quốc gia thuộc Bộ y tế cấp. Theo đó, sản phẩm Gà sốt Teriyaki của Công ty đủ điều kiện bán ra thị trường.

Diễn giải quy trình

  • Nguyên liệu

– Thực phẩm đông lạnh được nhập khẩu từ Nhật Bản.

– Các loại gia vị từ Việt Nam.

  • Rã đông

– Thực phẩm đông lạnh được rã đông trong thiết bị rã đông chuyên dụng có kiểm soát nhiệt độ và thời gian nhằm đảm bảo chất lượng Thực phẩm sau rã đông,

– Yêu cầu cảm quan Thực phẩm sau rã đông cấu trúc thịt đàn hồi, bề mặt không có dịch nhớt, không có tạp chất.

  • Làm sạch Thực phẩm

– Thực phẩm được làm sạch loại bỏ hết những phần lông còn sót bám chặt trên da của Thực phẩm, cạo sạch những phần da bị vàng và rửa lại nước sạch.

– Loại bỏ phần cổ, cánh, khủy … 

– Tiếp đến đưa sang công đoạn cắt bỏ phần nội tạng, trứng còn lại.

– Rửa lại bằng nước sạch và để ráo.

– Yêu cầu ở công đoạn này lông được làm sạch và loại bỏ phần tạp chất.

  • Khử mùi

– Thực phẩm sẽ được rửa lại bằng hỗn hợp dung dịch muối và rượu nồng độ loãng nhằm khử đi mùi hôi và một phần sát khuẩn Thực phẩm.

– Rửa lại bằng nước sạch và để ráo.

  • Cắt miếng có kích thước phù hợp

– Thực phẩm được đưa vào hệ thống máy cắt, cắt thành miếng nhỏ với kích thước khoảng (4×5 cm). Thực phẩm sau khi cắt xong để trong các sọt chứa sạch có rãnh để ráo nước chuẩn bị cho công đoạn trộn gia vị.

  • Chuẩn bị sốt và trộn gia vị

– Gia vị cho từng mẻ sẽ được chuẩn bị ở khu vực nấu sốt theo công thức đã được nghiên cứu và quy định. Sau khi sốt nấu xong sẽ được chuyển đến khu trộn để tiến hành trộn và ướp Thực phẩm.

– Thực phẩm sau khi được cắt miếng được chuyển vào thiết bị trộn có hút chân không, sau đó cho gia vị đã được chuẩn bị vào cùng. Bật chế độ trộn có hút chân không để tăng quá trình thẩm thấu gia vị vào trong Thực phẩm.

  • Đóng gói cấp 1

– Thực phẩm sẽ được cân theo khối lượng quy định, cho vào bao bì, hút chân không và hàn miệng bao gói.

– Nhân viên sẽ kiểm tra về ngoại quan gói sản phẩm (như kiểm tra độ kín đường hàn miệng túi, bao bì có bị thủng, vết xước…)

– Yêu cầu ở giai đoạn này là gói bán thành phẩm kín và không có dịch sốt dính ở miệng gói nhằm hạn chế sự phát triển vi sinh vật gây hư hỏng sản phẩm.

  • Tiệt trùng sản phẩm

– Các gói bán thành phẩm sau khi được hàn miệng sẽ theo băng tải đẩy ra khu vực chờ để xếp lên hệ thống giàn hấp…Sau đó các hệ thống giàn hấp có chứa bán thành phẩm sẽ được đưa vào Thiết bị hấp tiệt trùng để làm chín và tiệt trùng sản phẩm.

– Mục đích của quá trình tiệt trùng sản phẩm là

+ Nấu chín sản phẩm, tăng khả năng thẩm thấu gia vị vào trong Thực phẩm.

+ Tiêu diệt các vi sinh vật gây bệnh, các bào tử chịu nhiệt và ức chế các hệ enzim có hại do vi     sinh vật tạo ra, bảo đảm an toàn chất lượng thực phẩm.

  • Làm khô sản phẩm

– Kết thúc quá trình tiệt trùng sản phẩm sẽ được đưa qua khu vực làm khô sản phẩm. Ở khu vực này được bố trí máy thổi khô nhằm làm mất hết lượng nước đọng ở bên ngoài bao bì chuẩn bị để đi vào công đoạn dán tem nhãn và đóng thùng.

  • Đóng gói cấp 2 (gồm in date, lô sản xuất, dán nhãn, đóng thùng carton)

– Ở giai đoạn dán nhãn: Nhãn bao bì sẽ được in ngày sản xuất và lô sản xuất thông quá thiết bị in gia nhiệt. Tại đây, nhân viên sẽ kiểm tra thông tin nhãn, ngày sản xuất và lô sản xuất.

– Sau đó nhãn sẽ được dán lên bao bì sản phẩm, chuyển vào thùng carton và chuyển vào kho lưu trữ.

  • Ổn định sản phẩm.

– Ở giai đoạn ổn định: Tại kho sản phẩm sẽ lưu trong thời gian từ 3- 5 ngày để ổn định chất lượng, mùi vị của sản phẩm. Trong giai đoạn này sẽ tiến hành lấy mẫu của lô sản xuất để.

+ Kiểm tra về nếm cảm quan (gồm: cảm quan về màu sắc, mùi vị, trạng thái sản phẩm theo quy định TCCS).

+ Lấy mẫu để gửi các phòng kiểm nghiệm chứng nhận để kiểm tra các chỉ tiêu chất lượng. – Sau thời gian ổn định sản phẩm và có kết quả kiểm tra thì sản phẩm được xuất khỏi kho và lưu thông ra thị trường.
